Health Promotion Sciences Alumni Partner with Iron Gate to Provide Healthy Meals to Green County's Homeless Population

Two of our Health Promotion Sciences MPH alumni working at OU-Tulsa, Chef Valarie Carter and Lacey Caywood, have partnered with Iron Gate to improve the health and well-being of hundreds of homeless people in Green County by developing new dietary standards for meals that promote physical and mental health.

Iron Gate, an organization that provides food to the homeless, feeds 200 to 300 guests a day. Many of their guests suffer from cardiovascular disease, mental illness, and diabetes.

The new menu standards require four different types of vegetable servings, including dark green and orange-colored vegetables. Fruits rich in antioxidants, like berries, will also be served. Salmon, walnuts, and flax seeds will also be included in the menu. 

Improving health through a nutrient-rich diet can lead to a reduction in unpaid hospital and emergency room visits in Tulsa.
