Meet the Hudson Fellows

Sarah Corcoran

Sarah Corcoran received both her Bachelor’s and Master’s degrees in Nutritional Sciences from Oklahoma State University. She is a second-year PhD student in Health Promotion Sciences and has worked as a Graduate Research Assistant since 2023. She is also a registered dietitian after passing her boards in January 2025. She has had type 1 diabetes since 2003 and is focused on combining her personal experience with her educational background to help others prevent diabetes and improve outcomes for those already diagnosed. Her current research interests include mixed methods research strategies to examine public perceptions of diet-related recommendations and identifying effective, scalable, and sustainable interventions for diabetes prevention and management.

She has had the opportunity to present findings across campus including the OUHSC Graduate Research Education and Technology (GREAT) symposium, the Harold Hamm Diabetes Center Symposium, Health Promotion Research Center (HPRC) Annual Research Day, the OU Health Stephenson Cancer Center Annual Cancer Research Symposium, and the Society for Nutrition Education and Behavior (SNEB). She is also a member of the Oklahoma Diabetes Caucus with hopes of advocating for improvement in diabetes outcomes through social policy.

In her free time, she enjoys spending time with her cat Journey, reading, and drawing.
