Hudson College of Public Health Welcomes Two New Hudson Fellows

The Hudson Fellows in Public Health Program offers prestigious fellowships to graduate students who are excelling in their fields at the Hudson College of Public Health. Established in 2015 by Dr. Leslie Hudson and Mr. Clifford Hudson, this program aims to build a strong network of scholars, educators, and practitioners dedicated to advancing public health practices and outcomes for our state, nation, and the world.


Please join me in congratulating our newest Hudson Fellows: Sarah Corcoran and Anne Kapka



Sarah Corcoran, MS, RD

Sarah Corcoran received both her Bachelor’s and Master’s degrees in Nutritional Sciences from Oklahoma State University. She is a second-year PhD student in Health Promotion Sciences and has worked as a Graduate Research Assistant since 2023. She is a registered dietitian after passing her boards in January 2025. She has had type 1 diabetes since 2003 and is focused on combining her personal experience with her educational background to help others prevent diabetes and improve outcomes for those already diagnosed. Her current research interests include mixed methods research strategies to examine public perceptions of diet-related recommendations and identifying effective, scalable, and sustainable interventions for diabetes prevention and management.

She has had the opportunity to present findings across campus including the OUHSC Graduate Research Education and Technology (GREAT) symposium, the Harold Hamm Diabetes Center Symposium, Health Promotion Research Center (HPRC) Annual Research Day, the OU Health Stephenson Cancer Center Annual Cancer Research Symposium, and the Society for Nutrition Education and Behavior (SNEB). She is also a member of the Oklahoma Diabetes Caucus with hopes of advocating for improvement in diabetes outcomes through social policy.
In her free time, she enjoys spending time with her cat Journey, reading, and drawing.

Anne Kapka, MPH, CPH


Anne Kapka received her Bachelor of Science in Community Health from the University of Oklahoma and her Master of Public Health in Epidemiology from the OU Hudson College of Public Health, where she is currently a third-year PhD candidate in Epidemiology. Since 2021, she has served as a Graduate Research Assistant (GRA). Anne collaborates with the Oklahoma State Department of Health and the Oklahoma Healthy Brain Initiative (OHBI) Coalition on program evaluations, where she has gained valuable experience in data collection and management.
Anne’s research focuses on healthy brain aging and qualitative research methodologies to break down silos, enhance patient interactions, and improve health outcomes across Oklahoma’s healthcare system. She has presented her work on the health and resource access of Alzheimer’s caregivers at several conferences, including the Tribal Public Health Conference (TPHC), the Oklahoma Public Health Association (OPHA) Annual Conference, and the Graduate Research Education and Technology (GREAT) Symposium. Anne is actively involved in academic service and education, serving on departmental and college committees and as a teaching assistant, guest lecturing, and judging undergraduate research posters. Her commitment to student leadership is demonstrated through her previous roles as Vice President and President of the Biostatistics and Epidemiology Student Association (BSESA), and her current role as a Senator in the Student Government Association (SGA), representing the Graduate Student Association (GSA).

Outside of her academic pursuits, Anne enjoys spending time with family and friends, exploring new hobbies, and traveling.
